I am a baker and have been for years. To a point you do need to be careful on how much flour etc you are putitng in. If you really go off to far your bread will not turn out. But he was wrong on not letting the yeast touch the sugar. Sugar will activate the yeast and salt kills the yeast. bread like cake is more of a formula then a recipe for say. And to answer, yeast bread must have yeast. Otherwise use baking powder, won't be the same
